Pinapaitan & Kilawin

Last night, the battle between Pacman and Cotto was highlighted by a sumptuous Ilocano meal courtesy of my Ilocano brother-in-law (Uly). While everyone’s eyes were glued onto the big screen television, we were munching on pinapaitan and kilawin na kambing (goat’s meat and skin) at the same time. What a glorious way watching the fight and someone ruined the excitement by passing gas! Blame the food and excitement, a bad combination while watching a Pacquiao and Cotto match. Here we go.

Pinapaitan na kambing (goat's stew). Made of real goat's meat, entrails and skin.

Usually they add papait, an intestinal juice extracted from goat's intestine. But, in this case, my brother-in-law used apdo or apro (bile juice).

Kilawin na kambing, a concoction of goat's skin, ears and some entrails. Good for pulotan! I skipped on this one for health reasons.

Spices, such as siling labuyo, pepper, onions, etc. then smothered it a bit with sukang Iloko.
